No Sacchromyces was harmed in the making of this beer. The wild yeast Brettanomyces was added to pale malts and a ton of Citra and Centennial. Dry hopped with more citra and centennial, this funky beer is full of citrus and tropical fruit flavors. Aged for 6 months, this wild yeast fermented Belgian pale ale has loads of fruity character and just the right amount of funk.
Serve in a Tulip Glass. Pairs with salads, grilled and roasted game, farmhouse cheeses, and fruit pastries. Stands apart and can be savored alone.
Pours a copper color, with a pleasant peppery-hop aroma. Funky sour tropical fruits balance hop forward flavors in a light bodied beer with a bone dry character underneath it all.
Available occasionally, on draft at our pubs in Allentown and Bethlehem.
